The origin of this cooking appliance is lost in time. In the early 20th century, Portuguese hunters carried cataplanas full of onions and tomatoes so that they could cook game on a wood fire. Later, in the 1960s, the cataplana became a popular way of cooking fish and shellfish in the Algarve. Since then, it has become a feature of Portuguese cuisine. Like the pressure cooker, the shape of the cataplana allows the steam from cooking the food to be retained in the utensils, increasing the pressure and allowing cooking temperatures above 100 ° C. In addition, the concave shape, along with the excellent thermal conductivity of copper, means that the heat is distributed more evenly in the interior, which makes the food cooked more evenly.
